Chinese Style Bourbon Chicken

8boneless, skinless chicken thighs, trimmed of fat

1 Tbsppeanut oil (preferrably roasted peanut oil)

2 clovegarlic minced

1 tspginger, minced

1 Tbsprice vinegar

1/3 cbourbon such as jim beam

1/4 cred chili sauce
-
1/3 csoy sauce
-
1/3 cbrown sugar
-
2 Tbspcorn starch
-
4 ccooked, white rice
-
2green onions, finely sliced
How to Make Chinese Style Bourbon Chicken
- Grill Chicken over medium coals, 8 minutes per side, or bake in oven 25 minutes at 375 degrees. Set aside; keep warm in 170 degree oven.
- Heat peanut oil in a shallow sauce pan over medium heat. Add minced garlic and ginger saute over medium high heat for 30 seconds until aromatic!
- Stir in, rice vinegar, bourbon, red chili sauce, soy sauce, brown sugar and cornstarch into saucepan. Bring the sauce to a boil. Reduce the heat and simmer for 5 minutes or until thickened.
- While sauce is cooking, Slice the grilled chicken into strips and return to oven to keep warm.
- Toss chicken into the the sauce until well coated.
- Serve over white rice and garnish with sliced green onion.
