My mother passed this recipe down to me...she was in a Chinese cooking class in Eugene Oregon back in the 80s. She has since made this many times for potlucks, with everyone always wanting the recipe. I hope you enjoy this one as I do.
1Fry the Rice Sticks quickly in hot oil being careful not to brown. Remove and drain on paper towels.
2Toss together in a bowl the chicken, lettuce, green onions and almonds (Save the sesame seeds for the end)
3Make the dressing..pour over the salad. Add the cooked rice sticks and carefully combine. Top with sesame seeds and serve.
You can easily put this together for a potluck. Combine everything when you arrive.
