My mother passed this recipe down to me...she was in a Chinese cooking class in Eugene Oregon back in the 80s. She has since made this many times for potlucks, with everyone always wanting the recipe. I hope you enjoy this one as I do.

Ingredients
- 2 large chicken breasts, meat torn into slivers
- 2 ounces chinese rice sticks
- 1 small head of lettuce shredded
- 4 stalks - green onions chopped
- 2 tablespoons toasted almonds
- 2 tablespoons sesame seeds (white)
- - now for the dressing
- 1 tablespoon hoisin sauce
- 1/8 cup sesame oil
- 1/3 cup salad oil
- 1/2 cup red wine vinegar
- 1/3 cup sugar (or use truvia or 1/2 of each)
How To Make chinese chicken salad

Step 1Fry the Rice Sticks quickly in hot oil being careful not to brown. Remove and drain on paper towels.

Step 2Toss together in a bowl the chicken, lettuce, green onions and almonds (Save the sesame seeds for the end)

Step 3Make the dressing..pour over the salad. Add the cooked rice sticks and carefully combine. Top with sesame seeds and serve. You can easily put this together for a potluck. Combine everything when you arrive.
