Ingredients

  • 1/4 cup olive oil
  • 1 pound chicken breast, boneless and cubed
  • 1 - onion, sliced 1/4 inch thick
  • 1 teaspoon garlic, minced
  • 1/4 pound zucchini, trimmed and cut in 1" pieces
  • 1/2 - red bell pepper, sliced
  • 2 - tomatoes, cored, seeded and cubed
  • 1/2 teaspoon salt
  • 1 teaspoon italian seasoning
  • 1/4 teaspoon black pepper

How To Make chicken with vegetables

  • Step 1
    Heat the olive oil in a wok or large skillet over high heat.
  • Step 2
    Reduce the heat to medium high.
  • Step 3
    Add the chicken, onion and garlic.
  • Step 4
    Stir-fry, stirring constantly, for 3 minutes.
  • Step 5
    Add the zucchini and bell pepper, and saute for 3 minutes more, or until the zucchini is cooked but still slightly crisp and the onion is cooked.
  • Step 6
    Add the tomatoes, salt, Italian seasoning and pepper to the pan and cook for 3 minutes.
  • Step 7
    Serve immediately.
  • Step 8
    VARIATIONS: Green bell pepper may be used in place of red bell pepper.
  • Step 9
    In place of Italian seasoning, 1/4 teaspoon oregano, 1/2 teaspoon basil and 1/4 teaspoon rosemary can be substituted.
