I make this company all the time, can be served over rice or pasta. You can use chicken broth in place of the white wine.

  • 2 lb
    boneless skinless chicken breast cut in bite size pieces
  • 1 Tbsp
    olive oil
  • 2 c
    chopped sun-dried tomatoes in olive oil
  • 1 lb
    button mushrooms
  • 3 c
    white wine (can substitute chicken broth)
  • 2 clove
  • 1 small
  • 1 Tbsp
    oregano, dried
  • ·
    salt and pepper

How to Make Chicken with Sun-Dried Tomatoes


  1. Heat the oil in a large fryer pan, add the onion and cook until translucent.
  2. Add garlic and chicken. Cook until brown.
  3. Add the wine and bring to a slight boil.
  4. Add the mushroom, sun-dried tomatoes, oregano, salt and pepper. Cook until the wine reduces to half.
