I make this company all the time, can be served over rice or pasta. You can use chicken broth in place of the white wine.

Ingredients

boneless skinless chicken breast cut in bite size pieces
1 Tbsp
olive oil
2 c
chopped sun-dried tomatoes in olive oil
1 lb
button mushrooms
3 c
white wine (can substitute chicken broth)
2 clove
garlic
1 small
onion
1 Tbsp
oregano, dried
salt and pepper

How to Make Chicken with Sun-Dried Tomatoes

Step-by-Step

  • 1Heat the oil in a large fryer pan, add the onion and cook until translucent.
  • 2Add garlic and chicken. Cook until brown.
  • 3Add the wine and bring to a slight boil.
  • 4Add the mushroom, sun-dried tomatoes, oregano, salt and pepper. Cook until the wine reduces to half.
