I make this for company all the time, can be served over rice or pasta. You can use chicken broth in place of the white wine.

Yum! This our kind of easy weeknight dinner recipe. The white wine adds some acidity to the recipe. The sun-dried tomatoes are a bit tart and a burst of flavor. It's an easy dinner to impress guests. If you're looking to lower carbs, it would be delicious served over cauliflower rice too.

Ingredients

  • 2 pounds boneless skinless chicken breast cut in bite size pieces
  • 1 tablespoon olive oil
  • 2 cups chopped sun-dried tomatoes in olive oil
  • 1 pound button mushrooms
  • 3 cups white wine (can substitute chicken broth)
  • 2 cloves garlic
  • 1 small onion
  • 1 tablespoon oregano, dried
  • - salt and pepper

How To Make chicken with sun-dried tomatoes

  • Step 1
    Heat the oil in a large fryer pan, add the onion and cook until translucent.
  • Step 2
    Add garlic and chicken. Cook until brown.
  • Step 3
    Add the wine and bring to a slight boil.
  • Step 4
    Add the mushroom, sun-dried tomatoes, oregano, salt and pepper. Cook until the wine reduces to half.
