4-6chicken breasts, boneless and skinless

2/3 cchicken broth

1 pkg(4.4 ounce) spreadable herb cheese, like boursin

1shallot, minced
-
1 lgclove garlic, minced

1/2lemon, zested and juiced

2 Tbspolive oil, extra virgin, divided

1 Tbspall purpose

1 tspdried basil
-
1 tspdried oregano
-
1 tspdried tarragon

kosher salt and black pepper, to taste
How To Make chicken with creamy herb sauce

1Brush chicken breasts with 1 tablespoon olive oil and season generously with salt and pepper.

2Heat a large skillet over medium high heat and cook chicken breasts until opaque and no longer pink. Transfer to a plate and set aside.

3To the same skillet, heat remaining oil and sauté shallot and garlic, with basis, oregano, and tarragon, for 1-2 minutes or until fragrant.

4Stir in herb cheese (like Boursin), broth, lemon juice and zest, and whisk together until smooth. Then sprinkle in flour and whisk until incorporated.

5Cook for 5-10 minutes, or until sauce has thickened.

6Return chicken to skillet and cook another 2-3 minutes, or until warmed through. Garnish, as desired, with fresh herbs and serve hot over pasta or rice.
