A very flavorful little recipe that has dinner on the table in 30 minutes. The spreadable cheese makes a wonderful little cheese sauce as it melts and is the heart of this dish. Recipe comes from 12tomatoes.com and picture also comes from 12tomatoes.com.

Ingredients

  • 4-6 - chicken breasts, boneless and skinless
  • 2/3 cup chicken broth
  • 1 package (4.4 ounce) spreadable herb cheese, like boursin
  • 1 - shallot, minced
  • 1 large clove garlic, minced
  • 1/2 - lemon, zested and juiced
  • 2 tablespoons olive oil, extra virgin, divided
  • 1 tablespoon all purpose
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried tarragon
  • - kosher salt and black pepper, to taste

How To Make chicken with creamy herb sauce

  • Step 1
    Brush chicken breasts with 1 tablespoon olive oil and season generously with salt and pepper.
  • Step 2
    Heat a large skillet over medium high heat and cook chicken breasts until opaque and no longer pink. Transfer to a plate and set aside.
  • Step 3
    To the same skillet, heat remaining oil and sauté shallot and garlic, with basis, oregano, and tarragon, for 1-2 minutes or until fragrant.
  • Step 4
    Stir in herb cheese (like Boursin), broth, lemon juice and zest, and whisk together until smooth. Then sprinkle in flour and whisk until incorporated.
  • Step 5
    Cook for 5-10 minutes, or until sauce has thickened.
  • Step 6
    Return chicken to skillet and cook another 2-3 minutes, or until warmed through. Garnish, as desired, with fresh herbs and serve hot over pasta or rice.
