Got this out of a cook book .And we really liked it.I put in a mild salsa we dont like it very hot.

Ingredients

  • 1 c
    chopped onion
  • 4 Tbsp
    butter or margarine
  • 6 Tbsp
    all purpose flour
  • 1/3 c
    sour cream or half &half
  • 3/4 c
    green salsa
  • ·
    salt and pepper to taste
  • 3 c
    cubed cooked chicken
  • 12
    corn tortillas
  • 2 c
    shredded cojack cheese
  • 1/4 c
    chopped cilantro or parsley

How to Make Ranch House Chicken Tortilla bake

Step-by-Step

  1. Cook onion in butter until soft ;stir in flour.Add milk and sour cream,cooking and stirring until thickened ;stir in salsa. season to taste;stir in cubed chicken.
  2. Line a buttered 12x8 inch baker with 6 tortillas;spoon in chicken mixture. Top with remaining tortillas;top with cheese.
  3. Bake at 375 oven 30 to 40 minutes or until cheese melts and chicken filling is hot.Sprinkle with cilantro befor serving .Makes 6 servings
