Family Favorite, "Chicken Swan", with two dots over "a" in Swan. Originally from a family friend, Anne Suomi, who is Finnish. The entire family loves this recipe. I tried to "pinch it" but no one exactly replicates this and I think the lemon juice makes it. I've changed this to all fresh ingredients as it seems to taste better that way.

Ingredients

  • 4 large chicken breast
  • 2 - broccoli, fresh
  • 1 can cream of chicken soup
  • 1/2 cup mayonnaise
  • 1 teaspoon lemon juice fresh
  • 1/4 teaspoon curry powder
  • 1/2 cup sharp cheddar cheese
  • 1/2 cup soft bread crumbs or italian bread crumbs

How To Make chicken swan

  • Step 1
    Boil whole chicken breasts approximately 15-30 min. or until almost cooked through. Meanwhile wash and cut up broccoli florets and stems into 2-3 inch pieces, slicing stems thinly and discarding any tough ends. Remove chicken breast and boil broccoli for 3-5 min.
  • Step 2
    Sauce: Mix together in medium bowl; can of cream of chicken soup, mayonnaise, lemon juice and curry powder. Set aside.
  • Step 3
    Arrange broccoli in bottom of 9x12 inch casserole dish and place chicken on top. Pour step two mixture over top of broccoli and chicken
  • Step 4
    Sprinkle with cheddar cheese. Top with bread crumbs. (May be refrigerated or frozen at this point and defrosted and heated through later.)
  • Step 5
    Bake at 350 degrees for 30 minutes or until heated through.
