Family Favorite, "Chicken Swan", with two dots over "a" in Swan. Originally from a family friend, Anne Suomi, who is Finnish. The entire family loves this recipe. I tried to "pinch it" but no one exactly replicates this and I think the lemon juice makes it. I've changed this to all fresh ingredients as it seems to taste better that way.

Ingredients
- 4 large chicken breast
- 2 - broccoli, fresh
- 1 can cream of chicken soup
- 1/2 cup mayonnaise
- 1 teaspoon lemon juice fresh
- 1/4 teaspoon curry powder
- 1/2 cup sharp cheddar cheese
- 1/2 cup soft bread crumbs or italian bread crumbs
How To Make chicken swan

Step 1Boil whole chicken breasts approximately 15-30 min. or until almost cooked through. Meanwhile wash and cut up broccoli florets and stems into 2-3 inch pieces, slicing stems thinly and discarding any tough ends. Remove chicken breast and boil broccoli for 3-5 min.

Step 2Sauce: Mix together in medium bowl; can of cream of chicken soup, mayonnaise, lemon juice and curry powder. Set aside.

Step 3Arrange broccoli in bottom of 9x12 inch casserole dish and place chicken on top. Pour step two mixture over top of broccoli and chicken

Step 4Sprinkle with cheddar cheese. Top with bread crumbs. (May be refrigerated or frozen at this point and defrosted and heated through later.)

Step 5Bake at 350 degrees for 30 minutes or until heated through.
