  • 2 tsp
    canola oil
  • 2
    celelry stalks, chopped.
  • 2
    carrots, cut diagonally
  • 1-1/2 lb
    bonless, skinless chicken breasts, cut into strips
  • 1 Tbsp
  • 3/4 c
    orange juice
  • 3 Tbsp
    lite soy sauce
  • 1 Tbsp
  • 1 tsp
    ground ginger
  • 1/4 c
    cashews, chopped
  • 1/4 c
    green onions, cut diagonally

How to Make Chicken stir-fry w/ cashews


  1. Heat 1 tsp oil in wok or lg skillet over high heat. Add carrots and celery, stir fry 3 mins. Add remaining oil to skillet. Add chicken and stir fry for 5 mins.
  2. In bowl, dossolve cornstarch in orange juice until smooth. Stir in soy sauce, honey and ginger. Add sauce to skillet.
  3. Cook, stirring over medium heat until thickened. Sprinkle w/ cashews and green onions.
