chicken spinach stroganoff

This recipe was a delicious twist on stroganoff, and a lot lighter. Plus the added spinach makes it a one pot meal! We served our over whole wheat wide egg noodles.

Ingredients

  • 4 medium chicken breast halves, skinless and boneless
  • 1/4 teaspoon salt
  • 1/4 tablespoon garlic pepper
  • 8 ounces cremini mushrooms, sliced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can cream of mushroom soup
  • 1 cup non-fat plain greek yogurt
  • 4 ounces fresh baby spinach

How To Make chicken spinach stroganoff

  • Step 1
    Put everything in the slow cooker, but the spinach and yogurt.
  • Step 2
    Cook on high for 3 hours or low for 6 hours.
  • Step 3
    Loosely break the chicken into serving size pieces and turn the slow cooker off and add yogurt and spinach.
  • Step 4
    Serve over noodles.
