This recipe was a delicious twist on stroganoff, and a lot lighter. Plus the added spinach makes it a one pot meal! We served our over whole wheat wide egg noodles.

Ingredients

  • 4 medium
    chicken breast halves, skinless and boneless
  • 1/4 tsp
    salt
  • 1/4 Tbsp
    garlic pepper
  • 8 oz
    cremini mushrooms, sliced
  • 1 small
    onion, chopped
  • 2 clove
    garlic, minced
  • 1 can(s)
    cream of mushroom soup
  • 1 c
    non-fat plain greek yogurt
  • 4 oz
    fresh baby spinach

How to Make Chicken Spinach Stroganoff

Step-by-Step

  1. Put everything in the slow cooker, but the spinach and yogurt.
  2. Cook on high for 3 hours or low for 6 hours.
  3. Loosely break the chicken into serving size pieces and turn the slow cooker off and add yogurt and spinach.
  4. Serve over noodles.
