Chicken Slouvaki with Tzatziki Sauce
3 Tbspfresh lemon juice
1/2 tspdried oregano
2 tspolive oil, light
4 clovegarlic, minced
1/2 lbchicken breasts, boneless and skinless
4whole wheat pitas
1/2 ccumcumber, peeled, seeded and shredded
1/2 cplain, low-fat greek yogurt
1 Tbsplemon juice
1 clovegarlic, minced
How to Make Chicken Slouvaki with Tzatziki Sauce
- To prepare soulvaki, combine the first 5 ingredients in a zip lock bag; seal and shake to combine. Add uncooked chicken to bag. Marinate chicken in refrigerator for 30 minutes, turning once. (You can also let it sit over night, I recommend it!)
- Before you grill the chicken you will want to prepare the Tzatiki sauce. For the sauce you will want to combine the shredded cucumber, yogurt, lemon juice, salt and garlic clove, stirring well. Then place it in the refrigerator until the chicken is done being grilled.
- Near the end of grilling the chicken you will want to place the pita's on the grill only for a few seconds on each side so that they become warm and soft.
- Additional ingredients to complete the salad or pita sandwich:
chopped lettuce (preferably romaine)
pepperoncini peppers (if you like)
You can combine everything to make a chicken slouvaki salad or pita sandwich with the Tzatziki sauce as your dressing!
