Ingredients
- 1 package spanish rice mix
- 8 ounces boneless, skinless chicken breasts, cut into 1" pieces
- 1 - green bell pepper, chopped
- 1/2 cup red onion, chopped
- 1 - 14-1/2 oz can whole tomatoes, cut up
- 1/4 cup chicken broth
- 1 teaspoon minced garlic
- 8 ounces lg shrimp, peeled, deveined
- 1 cup frozen peas, thawed
- 1 - 4 oz can diced green chiles
- 3/4 teaspoon dried thyme
- - salt & pepper to taste
How To Make chicken & shrimp spanish rice

Step 1Prepare rice as directed on pkg. Speay a lg skillet w/ cooking spray.

Step 2Place skillet over medium heat. Add chicken, green pepper, onion and thyme to skillet. Cook until chicken is no longer pink.

Step 3Stir in undrained tomatoes, broth and garlic. Bring to boil, reduce heat and simmer for 10 mins. Add shrimp, peas and chiles. Cook, stirring for about 5 min, or until shrimp are pink. Season w/ salt and pepper. Serve mix over rice.
