I made this the other day over the open fire in my Dutch oven. It is very easy to make and has great flavor. Got this out of my Cow Boys Cookbook.

Ingredients

  • 1/2 cup chopped onions
  • 1/4 cup chopped green peppers.
  • 1/2 cup sliced button mushrooms
  • 1/2 stick butter
  • 1/4 cup olive oil, light
  • 6-8 - chicken breast halves, skinless and boneless
  • 1 cup white wine, medium
  • 1 8oz cans tomato sauce, italian seasoned
  • 4 tablespoons soy sauce, light
  • - salt and pepper, totaste.

  • Step 1
    In a large cast iron skillet. add 1/4 of buttes and 2/4 of olive oil. Saute onions, sell peppers, and mushroom for 3-4 minutes. Remove and place on a plate. In the skillet add remaning butter and oil. salt and pepper chicken breast.. Brown in skillet on all sides.. Add wine tomato sauce soy sauce onions, peppers, and mushrooms.. Simmer for 1-1 1/2 hours... Serve over hot cooked rice or noodles
