My dads recipe for the greatest gumbo!! And healthy too, because I made it w/ chicken sausage. Calories: 117 Fat: 4 grams Carbs: 8 grams.

Ingredients

  • 8 ounces boneless, skinless chicken breast cutlets
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 - links, fully-cooked chicken sausage, cut into 1/4" slices
  • 1 - 14.5 oz can diced tomatoes w/ chiles, not drained
  • 3 cups reduced-sodium chicken broth
  • 2 cups frozen cut okra
  • 1-1/2 cup chopped celery
  • 1 - green bell pepper, seeded, chopped
  • 1 large onion, chopped
  • 1-1/2 teaspoon cajun seasoning mix
  • 1 teaspoon minced garlic
  • 1 teaspoon worcestershire sauce
  • 1 teaspoon ground thyme

How To Make chicken-sausage gumbo

  • Step 1
    Season chicken w/ salt & pepper, place in slow cooker. Add all remaining ingredients and stir. Cover, cook on high for 4 hrs, or on low for 7 hrs. Remove chicken and place in lg bowl. Shred each piece w/ fork. Return shredded chicken to slow cooker. Serve.
