chicken satay with peanut sauce

This summer we really enjoyed making kebabs and this was one of of favorites. This picture and recipe is from the Relish magazine I hope you like them as much as we have.

Ingredients

  • 8 - 10 inch bamboo skewers that have been soaked in water for at least 30 minutes
  • 1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch strips
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon pepper
  • SAUCE:
  • 1/4 cup creamy peanut butter
  • 2 1/2 tablespoons hoisin sauce
  • 1 tablespoon fresh lime juice
  • 1 teaspoon chili-garlic sauce
  • 3/4 cup water

How To Make chicken satay with peanut sauce

  • Step 1
    Weave chicken pieces onto skewers. Combine lime juice, oil, salt and pepper and brush on skewered chicken pieces.
  • Step 2
    Heat grill to medium-high.
  • Step 3
    Prepare the sauce at this time by warming peanut butter in a small bowl in the microwave. Whisk in hoisin sauce,lime juice and chili-garlic sauce. Add water(more or less depending on your desired thickness.
  • Step 4
    Lightly oil your grill and grill the skewers for about 3 minutes per side or until the chicken is thoroughly cooked. Serve with the peanut sauce, goes great with a nice basmati or jasmine rice. For a real nice change try using coconut water to cook your rice in to serve with these kebabs.
