This summer we really enjoyed making kebabs and this was one of of favorites. This picture and recipe is from the Relish magazine I hope you like them as much as we have.

Ingredients

  • 8
    10 inch bamboo skewers that have been soaked in water for at least 30 minutes
  • 1 1/2 lb
    boneless, skinless chicken breasts, cut into 1-inch strips
  • 2 Tbsp
    fresh lime juice
  • 1 Tbsp
    olive oil
  • 1/2 tsp
    sea salt
  • 1/4 tsp
    pepper
  • SAUCE:

  • 1/4 c
    creamy peanut butter
  • 2 1/2 Tbsp
    hoisin sauce
  • 1 Tbsp
    fresh lime juice
  • 1 tsp
    chili-garlic sauce
  • 3/4 c
    water

How to Make Chicken Satay with Peanut Sauce

Step-by-Step

  1. Weave chicken pieces onto skewers. Combine lime juice, oil, salt and pepper and brush on skewered chicken pieces.
  2. Heat grill to medium-high.
  3. Prepare the sauce at this time by warming peanut butter in a small bowl in the microwave. Whisk in hoisin sauce,lime juice and chili-garlic sauce. Add water(more or less depending on your desired thickness.
  4. Lightly oil your grill and grill the skewers for about 3 minutes per side or until the chicken is thoroughly cooked. Serve with the peanut sauce, goes great with a nice basmati or jasmine rice. For a real nice change try using coconut water to cook your rice in to serve with these kebabs.
