chicken satay with peanut sauce
This summer we really enjoyed making kebabs and this was one of of favorites. This picture and recipe is from the Relish magazine I hope you like them as much as we have.

Ingredients
- 8 - 10 inch bamboo skewers that have been soaked in water for at least 30 minutes
- 1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch strips
- 2 tablespoons fresh lime juice
- 1 tablespoon olive oil
- 1/2 teaspoon sea salt
- 1/4 teaspoon pepper
- SAUCE:
- 1/4 cup creamy peanut butter
- 2 1/2 tablespoons hoisin sauce
- 1 tablespoon fresh lime juice
- 1 teaspoon chili-garlic sauce
- 3/4 cup water
How To Make chicken satay with peanut sauce

Step 1Weave chicken pieces onto skewers. Combine lime juice, oil, salt and pepper and brush on skewered chicken pieces.

Step 2Heat grill to medium-high.

Step 3Prepare the sauce at this time by warming peanut butter in a small bowl in the microwave. Whisk in hoisin sauce,lime juice and chili-garlic sauce. Add water(more or less depending on your desired thickness.

Step 4Lightly oil your grill and grill the skewers for about 3 minutes per side or until the chicken is thoroughly cooked. Serve with the peanut sauce, goes great with a nice basmati or jasmine rice. For a real nice change try using coconut water to cook your rice in to serve with these kebabs.
