Ingredients
- 1 - 10 oz. box of frozen chopped spinach
- 3 tablespoons olive oil
- - salt and pepper to taste
- 6 - chicken cutlets pounded and flattened
- 6 - paper thin slices of prosciutto
- 1 - 14 oz. can chicken broth
- 3 tablespoons lemon juice
- - grated parm. cheese for each cutlet
How To Make chicken saltimbocca

Step 1Thaw spinach and drain off all excess water. Pound chicken cutlets to flatted them. Add 1 tablespoon of olive oil to spinach, salt and pepper just a little, open up cutlets and put the slice of prosciutto then top with spinach in the middle, top with grated cheese and roll up and secure with toothpicks. Put 2 tablespoons of olive oil in pan and brown chicken, add lemon juice and chicken broth,bring to a boil reduce heat to low and simmer for 1 hour. Serve over rice or plain, spoon broth over chicken. Serve.
