chicken & roasted peppers
I had to think of something for dinner quickly one night and put this together with just what I had on hand - It turned out excellent and even better than I expected.

Ingredients
- 1 package chicken thighs, skinless, boneless (6 thighs)
- 2 - bell peppers, red & yellow
- 1 teaspoon lemon pepper
- 2 teaspoons poultry seasoning
- 1/2 teaspoon garlic powder
- 1/4 teaspoon garlic & herb seasoning mix
How To Make chicken & roasted peppers

Step 1Heat oven to 350.

Step 2Lightly spray baking pan with Pam or cooking oil and sprinkle lemon pepper in bottom of pan.

Step 3Lay chicken pieces on top of the lemon pepper. Sprinkle other spices over chicken. Cut bell peppers in long strips/fairly wide. Put bell pepper over chicken and in pan.

Step 4Bake uncovered approximately 40-45 min until chicken is just done and peppers are soft and getting dark on edges.

Step 5(The first time I made this I started with chicken that was only partially thawed and baked it for 1 hour and 10 minutes)
