chicken & roasted peppers

I had to think of something for dinner quickly one night and put this together with just what I had on hand - It turned out excellent and even better than I expected.

Ingredients

  • 1 package chicken thighs, skinless, boneless (6 thighs)
  • 2 - bell peppers, red & yellow
  • 1 teaspoon lemon pepper
  • 2 teaspoons poultry seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon garlic & herb seasoning mix

How To Make chicken & roasted peppers

  • Step 1
    Heat oven to 350.
  • Step 2
    Lightly spray baking pan with Pam or cooking oil and sprinkle lemon pepper in bottom of pan.
  • Step 3
    Lay chicken pieces on top of the lemon pepper. Sprinkle other spices over chicken. Cut bell peppers in long strips/fairly wide. Put bell pepper over chicken and in pan.
  • Step 4
    Bake uncovered approximately 40-45 min until chicken is just done and peppers are soft and getting dark on edges.
  • Step 5
    (The first time I made this I started with chicken that was only partially thawed and baked it for 1 hour and 10 minutes)
