I had to think of something for dinner quickly one night and put this together with just what I had on hand - It turned out excellent and even better than I expected.

1 pkg
chicken thighs, skinless, boneless (6 thighs)
bell peppers, red & yellow
1 tsp
lemon pepper
2 tsp
poultry seasoning
1/2 tsp
garlic powder
1/4 tsp
garlic & herb seasoning mix

How to Make Chicken & Roasted Peppers


  • 1Heat oven to 350.
  • 2Lightly spray baking pan with Pam or cooking oil and
    sprinkle lemon pepper in bottom of pan.
  • 3Lay chicken pieces on top of the lemon pepper. Sprinkle other spices over chicken. Cut bell peppers in long strips/fairly wide. Put bell pepper over chicken and in pan.
  • 4Bake uncovered approximately 40-45 min until chicken is just done and peppers are soft and getting dark on edges.
  • 5(The first time I made this I started with chicken that was only partially thawed and baked it for 1 hour and 10 minutes)
