Ingredients

  • 1 - chicken breast
  • 2/3 cup cooked quinoa
  • 2 cups spinach
  • 2 medium tomatoes
  • 1/2 - cucumber
  • 1 - avocado
  • 2 - shallots
  • 1 clove garlic
  • - juice of 1/2 lemon
  • 2 tablespoons olive oil
  • - salt and pepper to taste. (i prefer sea salt)

How To Make chicken quinoa salad

  • Step 1
    Cook the quinoa as directed. Chop up chicken, pan-fry until cooked, about 5 minutes. Now chop up the veggies, toss everything in a bowl and serve.
