Ingredients
- 1 - chicken breast
- 2/3 cup cooked quinoa
- 2 cups spinach
- 2 medium tomatoes
- 1/2 - cucumber
- 1 - avocado
- 2 - shallots
- 1 clove garlic
- - juice of 1/2 lemon
- 2 tablespoons olive oil
- - salt and pepper to taste. (i prefer sea salt)
How To Make chicken quinoa salad

Step 1Cook the quinoa as directed. Chop up chicken, pan-fry until cooked, about 5 minutes. Now chop up the veggies, toss everything in a bowl and serve.
