chicken pie casserole

i made this one day when I didn't really have much for crust ingredients, so I used what I had for left-over puff pastry and it came out real good. The puff pastry is like flaky dumplings.

Ingredients

  • 2 tablespoons vegetable or canola oil
  • 1 pound chicken breasts, cut into 1" pieces
  • 1 - onion, diced
  • 2 - celery stalks, diced
  • 1 large green bell pepper, diced
  • 1 - carrot, diced
  • 1 teaspoon minced garlic
  • 1 cup frozen corn
  • 1 teaspoon salt
  • 2 cups chicken broth
  • 1 tablespoon flour
  • 1 - sheet puff pastry, thawed

How To Make chicken pie casserole

  • Step 1
    Heat oven to 400. Heat oil in lg skillet, over med-high heat. Add chicken and cook until browned. Transfer chicken to a casserole dish.
  • Step 2
    Add onion, celer, bell pepper, carrot garlic and corn to skillet. Sprinkle w/ salt. Cook, stirring for 5 mins. Add broth, bring to a simmer over medium heat. Whisk in flour, cook 1 min.
  • Step 3
    Pour sauce into casserole dish. Cut puff pastry into 2" squares, gently scrunch up each square. Tuck them into the casserole, like you would with dumplings. Bake 25 mins.
