chicken pie casserole
i made this one day when I didn't really have much for crust ingredients, so I used what I had for left-over puff pastry and it came out real good. The puff pastry is like flaky dumplings.

Ingredients
- 2 tablespoons vegetable or canola oil
- 1 pound chicken breasts, cut into 1" pieces
- 1 - onion, diced
- 2 - celery stalks, diced
- 1 large green bell pepper, diced
- 1 - carrot, diced
- 1 teaspoon minced garlic
- 1 cup frozen corn
- 1 teaspoon salt
- 2 cups chicken broth
- 1 tablespoon flour
- 1 - sheet puff pastry, thawed
How To Make chicken pie casserole

Step 1Heat oven to 400. Heat oil in lg skillet, over med-high heat. Add chicken and cook until browned. Transfer chicken to a casserole dish.

Step 2Add onion, celer, bell pepper, carrot garlic and corn to skillet. Sprinkle w/ salt. Cook, stirring for 5 mins. Add broth, bring to a simmer over medium heat. Whisk in flour, cook 1 min.

Step 3Pour sauce into casserole dish. Cut puff pastry into 2" squares, gently scrunch up each square. Tuck them into the casserole, like you would with dumplings. Bake 25 mins.
