chicken piccata for 2

This is something fast & simple I have made for a week day dinner for me& my Boyfriend. He told me not to do anything fancy, but love it when he tasted it. This is 1 of our date nights meals when wee can't go out.

Ingredients

  • 2 - boneless chicken breast
  • 1/3 teaspoon salt and pepper
  • 1/4 cup all purpose flour
  • 1 tablespoon olive oil, extra virgin
  • 1 tablespoon butter, unsalted
  • 2 tablespoons white wine
  • 1 - lemon juice & slices

How To Make chicken piccata for 2

  • Step 1
    Heat a large frying pan over medium-high heat. Add the butter & olive oil. Then swirl around in the pan.
  • Step 2
    Cut the chicken into half lengthwise 7 pound until thin & even.
  • Step 3
    Season both sides of the chicken. Then lightly four & shake off extra flour.
  • Step 4
    Place chicken in the frying pan & cook for about 2mins per side. Pour in the wine carefully & swirl around in the pan for about 20 seconds.
  • Step 5
    Add in the lemon juice & slices. Move around in the pan for a few mins.
  • Step 6
    Take off the heat & serve immediately with rice, stuffing or mashed potatoes.
