Ingredients
- 1.5-2 pounds boneless chicken
- 1/2 teaspoon each salt & pepper
- 1/4 cup olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1/4 pound bacon, chopped
- 1 tablespoon garlic, sliced
- 1/2 cup white wine
- 15 ounces diced tomatoes
- 1 tablespoon thyme
- 1 teaspoon oregano, dried
- 1/2 cup chicken stock
- 2 tablespoons capers
- 1/8 cup parsley, chopped
- 1 pound egg noodles, or pasta of choice
How To Make chicken & peppers

Step 1Cook egg noodles in a pan of water

Step 2Season chicken on both sides with salt & pepper. Slice chicken against the grain into strips

Step 3Heat olive oil in a skillet. Add the bacon and cook until crisp, roughly 5 mins. Remove bacon from pan. Brown chicken on both sides & remove from pan.

Step 4Add the peppers to the skillet. Sauté until tender & beginning to brown on the sides. Add garlic & cook 1 minute more.

Step 5Deglaze the pan with the white wine. Add diced tomatoes, thyme & oregano. Heat through.

Step 6Return chicken to the pan along with chicken stock. Bring to a boil & cook until chicken is done.

Step 7Dress with capers, parsley & bacon. Serve over noodles.
