A meal my daughter asked for this week so I thought I better add it to Just A Pinch. Enjoy!

Ingredients
- 12 - manicotti shells
- 1 can cream of chicken soup
- 1/2 cup sour cream
- 3 cups cooked chicken, diced
- 1/4 cup onion, chopped
- 4 - mushrooms, sliced
- 2 cups cheddar, shredded
- 1/2 teaspoon garlic, minced
- - cooking spray
How To Make chicken manicotti

Step 1Cook manicotti, set aside.

Step 2Preheat oven to 350 degrees.

Step 3Heat skillet, spray with cooking spray, add diced chicken and cook until no longer pink. Remove chicken. Spray pan and saute onion, mushrooms and garlic. Use 1-2 T of water if needed. Cook until onions are transparent then add back chicken and stir to combine. Remove from heat.

Step 4Combine soup and sour cream in a bowl. Spoon half of the mixture into another mixing bowl and add chicken and saute mixture. Stir until combined then stuff the manicotti shells with the chicken mixture. Place shells in a 13x9 baking dish coated with cooking spray. Spread reserved 1/2 soup mixture over top of shells. Sprinkle top with cheese.

Step 5Bake at 350 degrees for 30 minutes.
