chicken kiev north country style
A co worker of my sister gave me this recipe, and have been making it for ages. There's something very homey and conforting about this dish. We like it with a side of mashed potatoes, the butter sauce is divine over the chicken. I made it with sweet potatoes that night because I had them left over, and it's good with them too!

Ingredients
- 4 medium chicken breasts, boneless skinless
- 2/3 cup melted butter
- - breading:
- 1/2 cup italian bread crumbs
- 2 tablespoons parmesean cheese, grated
- 1 teaspoon sweet basil, dried
- 1 teaspoon oregano, dried
- 1/4 teaspoon salt
- 1/2 teaspoon garlic salt
- - butter sauce:
- 1/4 cup white wine, i like chardonnay, don't use cooking wine, use whatever you would drink.
- 1/4 cup scallions, chopped, green parts too
- 1/4 cup fresh parsley, chopped

Step 1Preheat oven to 375 degrees.

Step 2Melt butter, set aside.

Step 3Combine bread crumbs, cheese, basil, orggano, garlic salt and salt.

Step 4Dip chicken in melted butter, then roll in seasoned crumbs to coat well. Reserve melted butter.

Step 5Place chicken in pan sprayed with no non stick spray.

Step 6Bake for 50 minutes, or until tests done.

Step 7Meanwhile, add wine, green onions, and parsley to reserved butter (about 1/2 cup).

Step 8When chicken is golden brown, pour sauce over, and continue to cook for 5 more minutes.
