chicken kebabs w/lemon pepper yogurt

this is one of my favorite to grill up in the summer...

Ingredients

  • KEBABS:
  • 2 cups evoo(extra virgin olive oil)
  • - juice from 3 lemons
  • 2 tablespoons chopped garlic (fresh)
  • 3/4 tablespoon chopped rosemary leaves (fresh)
  • 3/4 tablespoon thyme, leaves (fresh)
  • 6 - single bonless skinless chicken breast cut into lg cubes
  • 1 teaspoon dried oregano
  • 1 large red onion, cut into wedges
  • - salt and pepper to taste
  • - bamboo skewers
  • SAUCE:
  • 2 - 7oz - containers plain yogurt
  • 4 tablespoons sour cream, lite (or fat free)
  • - zest of 2 lemons (fine)
  • - juice from 1 lemon
  • 2 tablespoons minced garlic
  • 1 tablespoon pepper
  • 2 teaspoons salt
  • 1/3 cup fresh mint or dill (chopped)
  • - pocket-less pita bread (warmed or grilled)

How To Make chicken kebabs w/lemon pepper yogurt

  • Step 1
    Kebabs: in a plastic bag, combine evoo, lemon juice, garlic, rosemary, and thyme. Add chicken, shake well. put in the fridge for 3 hrs
  • Step 2
    Sauce: combine all sauce ingredients in a mixing bowl,mix well and refrigerate at least 2 hrs
  • Step 3
    remove chicken pieces from bag salt & pepper well. Skewer the chicken and onions(you can also add mushrooms and green & red peppers to skewers). Grill chicken for 5 min. on each side, until golden brown and juices of chicken run clear when poked with extra skewer.
  • Step 4
    mean while warm Pitas. after chicken is cooked add to warm folded pita and top with lemon pepper yogurt sauce.
  • Step 5
    if you choose i like to put it on rice. So make your favorite rice i use white or brown rice(plain), both bring out the lemon pepper yogurt sauce.
