Ingredients

  • 3 - chicken breasts,boned,skinned and cut into 1 inch chunks
  • 12 - cherry tomatoes
  • 2 - small onions, quarted lengthwise
  • 1 - large green pepper, cut into 1 inch chunks
  • 1/4 cup oil, preferably olive oil
  • 2 tablespoons soy sauce
  • 2 tablespoons lemon juice
  • 1/2 teaspoon whole thyme leaves
  • 1/4 teaspoon pepper

How To Make chicken kabobs

  • Step 1
    Thread chicken, tomatoes, onion quarters, and green pepper alternately on six 8 inch skewers. (use wooden skewers if possible), arrange kabobs in a 10 inch round baking dish.
  • Step 2
    Combine all remaining ingredients in a small bowl. Brush on kabobs. Microwave, uncovered, at power level high for 9 to 11 1/2 minutes, or until chicken and vegetables are cooked, rearranging the skewers once basting twice with marinade.
