chicken in white wine sauce
This is a recipe I developed after eating at a local franchise, and decided to make my own. When I want to "Show Out" a little, this is what I serve as an entree'. I hope you enjoy it too.

Ingredients
- dash oil for sauteing
- 4 medium chicken thighs, skinless and boneless
- 1 small onion
- 1/2 small bell pepper
- 3 packages pepperoncini peppers ( red) 1 if green
- 2 tablespoons cappers w/2 spoons of liquid
- 1 clove garlic crushed
- 2 teaspoons cilantro, fresh
- 1/4 cup mozzarella cheese
- 1 tablespoon unsalted cajan seasoning
- 2 tablespoons butter
- 1/2 cup white wine
- 1/2 cup heavy whipping cream
- dash salt and pepper to taste
How To Make chicken in white wine sauce

Step 1Coat skillet with oil Add Onion, peppers and garlic Saute' till onions are lightly transparant Remove from skillet DO NOT WASH SKILLET

Step 2Add more oil to coat skillet Fry chicken on both sides till golden (chicken is ready to turn when easily release from pan.) Remove chicken from pan,set aside (DO NOT WASH SKILLET)

Step 3Return to skillet the Onions, pepper and garlic Add spices, cappers w/liquid, cilantro,cheese and White Wine Scrap all bits on bottom of pan. Add butter

Step 4Return chicken to sauce in skillet Baste chicken pieces with sauce APPROX. 1 MIN. Lower flame to lowest position *cover with lid Simmer 5 min.

Step 5REMOVE LID Add heavy cream, stir sauce

Step 6Simmer 2-4 min. UNCOVERED Serve over Pasta, Rice or Couscous ENJOY !
