chicken in garden gravy
I hope you will enjoy this tasty dish that is one of the first dishes I ever made for company, as a young bride. I was over the moon with the results. It was quick and easy, tasted great and is perfect for family or friends. You will want some nice crusty bread to get the last of the gravy. This dish is wonderful on its own, but certainly shines over mashed potatoes, rice or pasta.

Ingredients
- 1 cup coarsely chopped sweet onions
- 1 cup coarsely chopped celery
- 1 cup sliced white mushrooms
- 1 large garlic clove, finely chopped
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 teaspoon dried thyme or 2 sprigs fresh thyme
- 1 whole chicken, cut up
- 1/4 cup butter, melted
- 1 pound zucchini, thinly sliced or 1 pound fresh green beans
- 2 lemons, thinly sliced
- 2 tablespoons cornstarch
- 1 1/2 cups chicken broth
How To Make chicken in garden gravy

Step 1Preheat oven to 375 degrees F.

Step 2Into a shallow pan, add onion, celery, mushrooms, garlic, salt, pepper and thyme; mix well.

Step 3Place the chicken pieces on top of the vegetables skin side up and brush with melted butter. Bake for 30 minutes.

Step 4Add zucchini or green beans to the pan. Add the lemon slices on top and bake another 30 minutes.

Step 5Once cooked, remove the meat and vegetables, keeping them warm. Add the cornstarch and broth into a small bowl, mix until it is smooth with no lumps, then add to the pan juices.

Step 6Boil for 1- 2 minutes over medium heat, stirring constantly. Taste and adjust salt and pepper if necessary. Pour over chicken and enjoy.
