Some of the ingredients have no specific measurements because I just prefer to estimate to my taste. This dish is not spicy; however, you may increase the red pepper to add a kick to it. :-)

Ingredients
- 1 to 2 pounds skinned chicken pieces
- 3 to 4 - white and calamata olives
- 1 tablespoon capers
- 2 - peeled can tomatoes
- - salt & olive oil
- - chopped fresh or powdered red pepper- make it as hot/mild as you wish
- 2 cloves chopped garlic
- 1/2 cup wine
- - fresh bay leave rosmary, basil, mint, thyme, parsley, can substitute with dried
How To Make chicken & herb

Step 1Let the chicken brown with the oil and garlic and red pepper, add capers, olives, tomatoes, wine. Let it evaporate. Add the herbs and let it cook for about 20-25 min. Serve with rise, pasta, or bread. Very easy and quick dish that will impress your guests or loved ones. Enjoy!
