I love slowcooking in the fall & winter. I freeze leftovers in (generous!) single serving microwaveable containers for quick lunches or suppers. Jim(my hubby) really likes this one! I'll put up a foto as soon as I figure out how!!!

Ingredients

  • 3 to 4 pounds chicken, cooked and cut into bite-sized chunks
  • 1 can chicken broth, low salt
  • 2 cans favorite beer
  • 8 ounces fresh baby carrots
  • 8 ounces fresh or frozen wax beans
  • 8 ounces fresh or frozen sweet corn
  • 1 medium yellow crooked neck squash pealed and chunked,
  • 1 medium chopped onion
  • 8 ounces fresh sliced mushrooms
  • 2 tablespoons minced garlic
  • 1/2 cup sugar-free maple syrup
  • 2 tablespoons liquid smoke flavoring
  • 2 tablespoons sage, dried
  • 1 large peeled, cored and chopped red apple
  • 1/2 cup whole wheat flour
  • - fresh ground black pepper to taste

How To Make chicken harvest stew

  • Step 1
    Put all ingredients in large slowcooker on high for @ 3 hours.
  • Step 2
    Reduce to low and cook for another 2 hours.
  • Step 3
    Turn slowcooker to warm and serve with buttered bread slices when ready to eat. Enjoy!
