I had written this down a while back and just found it in a desk drawer.

Ingredients

  • 16 ounces chicken breast halves, skinless and boneless, cut into bite size pieces ( boneless thighs are also good)
  • 1 tablespoon olive oil
  • 2 cups brown rice, cooked
  • 2 tablespoons soy sauce, low sodium
  • 3 teaspoons chinese five spice powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup frozen peas, thawed
  • 1 cup pineapple tidbits, drained

How To Make chicken fried rice

  • Step 1
    Heat oil in medium skillet.
  • Step 2
    Add chicken and cook over medium heat until cooked through and juices run clear.
  • Step 3
    Add Brown rice, spices, 5 spice, soy sauce, and peas, heat for 2-4 mins.
  • Step 4
    Add pinapple and allow to heat through.
