I went to a local family owned shop called Badurik Butcher Block and bought several cuts of meat along with some hot Italian sausage that my husband always requests that I get. Well, when I got home it wasn't hot sausage but Chicken Feta Spinach Sausage that I didn't know what to do with. It is not something I would have even bought. Well, I was pleasingly surprised at how tasty this sausage is and that my husband Anthony and nephew Rhyan really enjoyed it as well. From now on, I can add this healthier version of sausage to our dinner recipes as it is delicious.

June 5th, 2014 --- Decided to make this dish a little different and added 1/2 - 3/4 cup sour cream. Gave it a creaminess and lightened up the tomato flavor...very tasty this way as well.
