Chicken fajita bowl
4 largechicken breasts, cooked and chopped or shredded
4 cshredded lettuce
4 cbrown rice
2 ccheddar cheese, shredded
1 conion, chopped
1 cred bell pepper, chopped
1 can(s)black beans, drained and rinsed
1-2 largeavocados, cut into chunks
1/2 csalsa of choice
How to Make Chicken fajita bowl
- If you haven't already, cook your chicken and rice, set aside. (I grilled my chicken)
- In a large frying pan, add oil, heat over medium heat, and add onions and peppers. Saute for about 15 minutes, tossing occasionally. When done, remove and set aside.
- Choose a serving bowl, add 1 cup rice, 1 cup chicken, 1/4 cup cheese, 1/4 cup pepper/onion mixture, 1/4 cup black beans, 1 cup lettuce, a scoop of avocado, and salsa.
This recipe is great for meal prep, just make 4 separate Tupperware full, then grab and go as needed.
