chicken essentials: baked garlic/butter chicken
A very easy dish to prepare, and you can have it on the table in a quick 40 minutes. But do not let the quick time fool you… It’s bursting with great flavor. Serve with your favorite side dishes, and don’t forget to drizzle some of that yummy sauce over the top. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 5 tablespoons sweet butter, unsalted (if you have clarified butter, use it)
- 3 cloves garlic, minced
- 2 medium boneless, skinless chicken breasts, about 8 ounces
- 1 sprig fresh rosemary, just the leaves
- 1 teaspoon capers, with juice
- - salt, kosher variety, to taste
- - black pepper, freshly ground, to taste
- 2 slices provolone cheese

Step 1PREP/PREPARE

Step 2Gather your Ingredients (mise en place).

Step 3Place the butter into a small saucepan over medium-low heat.

Step 4When the butter has melted and the foaming subsides, add the minced garlic, and the capers.

Step 5Chef's Note: Reduce the heat to low, and allow to slowly cook with the butter, about 4 – 5 minutes.

Step 6Add the leaves from the rosemary, and continue to cook for an additional 2 minutes.

Step 7Place a rack in the middle position, and preheat the oven to 375f (190c).

Step 8While the butter, garlic, capers, and rosemary are getting to know each other, lightly oil an ovenproof dish.

Step 9Sprinkle the chicken breasts with a bit of salt and pepper, and then place them in the dish.

Step 10Pour the garlic/caper, butter, and rosemary mixture over the chicken.

Step 11Place the dish in the preheated oven and bake until the internal temperature of the chicken reaches 160f (70c), about 25 – 30 minutes.

Step 12Remove from the oven, and add with the cheese.

Step 13Pop under a hot broiler until the cheese begins to bubble, and turn brown in spots, about 1 – 2 mintes.

Step 15Plate the chicken with your favorite sides (sautéed spinach, baked mushrooms), and then drizzle on a bit of that yummy sauce. Enjoy.
