How to Make Chicken & Dumplings
- Put pulled chicken meat back same pan with broth. Add 1/2 cup of margarine or butter. Let boil slowly while making the dumplings. Make sure you have plenty of water in the pan.
- To Make Dumplings: Take 2 or 21/2 cups of flour in large bowl. Add 3 tblps. of oil. Add 1/2 cup of milk to flour mixture. Stir. Take a soup ladle and dip into the chicken broth to add enough to work it up. 3 soup ladles worked for me. Stir in till moistened. If it is too dry add little more broth. Do not stir too much will make your dumplings doughy.
- Roll the dough into a large ball. Take a small section of the dough at a time, and roll out with a rolling pin onto a floured countertop. Roll in a circle to the desired thickness. (This depends on if you like them thick or thin). Take a knife and cut into long pieces. Keep using the dough doing the same procedure till all the dough is used up. Put the dumplings in one at a time into the pan of boiling chicken broth. If boiling hard turn down to lower temp and cook till done. I always sample one to see if they are done. Very good!!
