chicken curry with raisins pita sandwiches

It came about when I was thinking of making something with alfalfa sprouts and putting a sandwich together with my chicken curry salad recipe into a pita.

Ingredients
- 2 - chicken breasts
- 2 tablespoons yellow curry powder
- 1 cup mayonaisse
- 1 cup raisins
- 2 tablespoons mango chutney or jam
- FOR THE CHICKEN CURRY WITH RAISINS
- FOR THE SANDWICHE
- 4 - pitas cut in half
- 1 - cucumber ( sliced)
- 1 package alfalfa sprouts
- - salt and pepper to taste
How To Make chicken curry with raisins pita sandwiches

Step 1Preheat the oven to 400 degrees. Season the chicken with salt and pepper. Place on baking pan and bake for 25 minutes or until done.

Step 2After cooling the chicken on a wire rack, cut it into bite size pieces. Set aside.

Step 3In a small mixing bowl. combine the mayonaisse,curry powder and mango jam or chutney. Mix well.

Step 4Put cut pieces of chicken into a large bowl and pour the mayo curry mixture over it and mix it in well. Add raisins and mix.

Step 5Cut the pitas in half. Slice the cucumbers thinly. Open the alfalfa sprouts package. combine sandwich by putting some of the chicken curry in the pocket pita, then slices of the cucumbers, and then the alfalfa sprouts on the top of the pita.
