chicken chili
Great for a chilly day over seas! Simple and easy to find ingredients. Makes you feel like you're home when you're 1000s of miles away!...currently posting this from a stint abroad(in Japan). Hope you all enjoy!

Serves 4
Ingredients
- 1 1/2 cups onion (chopped)
- 3/4 cup green and/or red bell pepper (chopped)
- 2 cloves garlic (minced)
- 2 tablespoons vegetable oil
- 1 1/2 - 2 pounds chicken breast (cubed)
- 1 tablespoon chili powder
- 1 1/2 teaspoons cumin
- 1/4 teaspoon cayenne pepper (1/2 if you like it spicy)
- 1 teaspoon ground coriander
- 1/2 teaspoon salt
- 1 can diced tomatoes (with liquid) 14.5oz
- 1 can tomato paste 6oz
- 1 can chicken broth 10.5oz
- 1/2 cup water
- 1 - bay leaf
- 1 can garbanzo beans, drained and rinsed 15oz
How To Make chicken chili

Step 1In a large pot, cook onion, green/red pepper and garlic in oil over medium-high heat for 10 minutes or until onion is tender. Add chicken; cook and stir constantly for 4 minutes or until browned. Add the next 10 ingredients; bring to a boil. Reduce heat; cover and simmer, stirring occasionally, for 40 minutes.

Step 2Add beans; cook, uncovered, for 20 minutes, stirring occasionally. Remove bay leaf.

Step 3Serve and top, if you desire, with shredded cheese, sour cream, etc.
