diced tomatoes, undrained
1 (6 oz.) can(s)
tomato paste
8 oz
fresh mushrooms, sliced
small onion, chopped
4 clove
garlic, minced
4 Tbsp
chopped, fresh parsley, divided
2 Tbsp
chopped, fresh basil
1/4 c
olive oil
1 Tbsp
2 Tbsp
cold water
3 lb
bone in, chicken, legs and thighs, skinned

How to Make Chicken Cacciatore


  • 1In large, deep skillet, heat olive oil. Add chicken and brown. Drain off oil.
  • 2Add remaining ingredients, except for cornstarch and 2 Tbsp. cold water, reserving 2 Tbsp. fresh parsley. Reduce heat and simmer for 1 hour, or until chicken is very tender.
  • 3Mix cornstarch and cold water until smooth. Add to sauce and stir until slightly thickened.
  • 4Serve chicken and sauce over hot, cooked fettucine or thin egg noodles.
