MY FAMILY LOVES THIS DISH BUT I USUALLY USE BONE IN BREAST N THIGHS...THIS TIME I USED BONELESS BREAST N IT STILL CAME OUT DELICIOUS. I SERVED MINE ON RIGATONI....ANY PASTA WILL DO :) NEW PIX...THIS TIME BONE-IN N COLORED PEPPERS....SAME GREAT DISH :)

Ingredients
- 4 large boneless chicken breast, cut into 2 inch pieces
- 3 large mixture of red n green peppers (sliced thick ) i only had red ones :(
- 1 cup mushrooms, sliced
- 1 large onion, (sliced thick)
- 3 cloves garlic, (sliced)
- 1 can crushed tomatoes (large) 28 oz
- 1 can tomato paste
- 1 cup red wine (i used cabernet savignon)
- 2 tablespoons fresh basil (chopped or torn) dry will work just use 1 tsp.
- - salt n pepper to taste
- - parmesean cheese
- - olive oil
- 1/2 teaspoon red pepper flakes
- 1 pound rigatoni or ziti, cooked
How To Make chicken cacciatore

Step 1IN A LARGE PAN BROWN CHICKEN PIECES SLIGHTLY ON BOTH SIDES IN A COUPLE TBLSPS. OF OLIVE OIL N SEASON WITH SALT N PEPPER. SET CHICKEN ASIDE.

Step 2ADD ANOTHER 2 TBLSPNS OF OLIVE OIL N SAUTE PEPPERS, ONIONS N GARLIC UNTIL SOFTENED N SLIGHTLY BROWNED. SEASON WITH SALT N PEPPER N STIRRING OCCASIONALLY.

Step 3THEN ADD MUSHROOMS N COOK FOR A FEW MORE MINUTES THEN ADD CRUSHED TOMATOES, TOMATO PASTE, RED WINE, RED PEPPER FLAKES N BASIL. STIR N LET THIS COOK ON LOW/MED FOR ABOUT 7 MIN.

Step 4RETURN CHICKEN TO PAN N MIX IN WITH SAUCE. COVER N REDUCE TO A SIMMER FOR 20 MINUTES. SERVE OVER PASTA N SPRINKLE WITH PARMESEAN CHEESE...ENJOY!
