Ingredients

1/4 tspallspice, ground

1 tspsalt

1/2 tsppepper

4 smallchicken breasts, boneless and skinless

2shallots
-
3 cred cabbage, shredded

1/2 cchicken stock
-
2 Tbspvinegar
-
1 tspbrown sugar
-
1 tspcaraway seeds
-
1 Tbspolive oil
-
·chopped chives for garnish (optional)
How to Make CHICKEN & CABBAGE
- In a small bowl, combine the caraway seeds, allspice, salt and pepper. Use this blend to season the chicken.
- In a skillet that has been sprayed with cooking oil, cook the chicken over medium heat for about 10 minutes on each side; set aside.
- For the sauce, use the same skillet and add olive oil to the hot pan. Saute shallots for 2 minutes. Then add the shredded cabbage, chicken stock, vinegar, and brown sugar.
- Turn the heat to medium-high and cook, stirring, until the cabbage is coated with glaze.
- Return the cooked chicken to the skillet and cook for about 10 minutes more (or until no longer pink inside). Garnish with choppedf chives.
