chicken cabbage tacos

I love tacos but wanted a heathier version. I love chicken. I cook just for me which can be challenging when you are trying to be good. For this recipe I use chicken tenders that I prepare a big batch of at the beginning of the week and just pull out as I need. Love cabbage too and always looking for ways to incorporate into my cooking. No need for cheese or sour cream. These are grest as is. Hope you enjoy!

Ingredients

  • 2 - chicken tenders, boneless, skinless
  • 2 - corn tortillas
  • 2 cups cabbage, shredded
  • 1 teaspoon soy sauce, low sodium
  • 1 pinch red pepper flakes
  • - vegetable cooking spray
  • 1/2 - onion

How To Make chicken cabbage tacos

  • Step 1
    Saute chicken tenders in skillet with cooking spray. I use a chicken spice mixture, but you can use just a little salt & pepper for flavor. Cook until there is no pink.
  • Step 2
    Spray skillet with cooking spray and add onion and shredded cabbage. Cook to your liking. I like mine to have a little crunch so I cook it for just a few minutes to barely wilt it.
  • Step 3
    Add red pepper flakes and soy sauce. Stir to incorporate.
  • Step 4
    Spray same skillet with another touch of cooking spray on low heat and add the 2 corn tortilla's. Cook until they start to puff up then flip and cook for just another minute.
  • Step 5
    Assemble and enjoy!
