chicken-brocolli salad

Salads are so good and good for you. I especially like all kinds of Chicken Salads, but wanted to fix one that was a little different than the ones with fruit and/or nuts –and with more than just chicken and a dressing. I came up with this Chicken-Broccoli Salad, which has vegetables and depending on the portions of your serving –it makes a complete meal; you might want to add a dinner roll (or not). This recipe can be doubled. But since it is just one of me; I used the following measurements and had enough for 4 nice-sized servings.

Ingredients

  • 1/2 - roasted chicken (store bought), shredded or cut in bite-size pieces
  • 1 medium onion, chopped
  • 1 large carrot grated
  • 2 - celery stalks, chopped
  • 1/4 - 1/2 cup radishes, chopped
  • 1/2 pound fresh broccoli (cut into small flowerets)
  • 2 tablespoons finely minced bell pepper (i had red and green, which is what i used)
  • 1 teaspoon finely minced jalapeno pepper (optional)
  • 2 - boiled eggs, chopped
  • 4 tablespoons mayonnaise or to taste (i use hellmann’s with olive oil mayonnaise)

How To Make chicken-brocolli salad

  • Step 1
    Gather all ingredients; and arrange ingredients in a large bowl in order given.
  • Step 2
    Mix well and refrigerate until ready to serve.
  • Step 3
    Enjoy!
