chicken broccoli soup
I felt like playing in the kitchen , so I put this together to use up a rotisserie chicken.

Ingredients
- 1 - rotisserie chicken carcass w/ about
- 1 1/2 cups cooked chicken left on
- 1 1/2 cups broccoli flowerettes ( i also peel and slice the stems and add)
- 1 1/2 cups baby carrots
- 1 1/2 cups sliced mushrooms
- - chicken broth to cover
- 1/4 teaspoon each: basil, thyme, marjoram, rosemary, garlic powder and parsley.
- 1 teaspoon dried, chopped onion
How To Make chicken broccoli soup

Step 1Place chicken carcass in saucepan; add water to cover.

Step 2Simmer, covered about 1/2 hour.

Step 3Cool and drain, saving cooking liquid. Pick meat from bones and return meat and liquid to pan.

Step 4Add Broccoli, carrots, mushrooms, chicken broth and herbs and seasonings.

Step 5Cover and simmer about 20 minutes until vegetables are tender.

Step 6Adjust herbs to taste.
