I'm always looking for different ways to cook chicken. Mushrooms and wine up the fancy factor for this easy way to prepare chicken breasts! Serve over brown rice with some steamed veggies. About 2 WW points.

Ingredients For chicken breasts with mushroom wine sauce

  • 2
    chicken breasts, boneless, skinless (about 4 oz each)
  • 1/4 tsp
    salt or to taste
  • 1/4 tsp
    black pepper or to taste
  • 1 sm
    shallot, minced
  • 1 c
    sliced baby bella or other mushrooms
  • 1/2 c
    white wine
  • 1 tsp
    Dijon mustard
  • 1/4 tsp
    thyme
  • minced parsley, for serving

How To Make chicken breasts with mushroom wine sauce

    Either pound each breast until about 1/2 inch thick or (and this is my preferred method) carefully slice one large breast in half so there are 2 thin breast pieces.

    Season with salt and pepper.

    Spray a skillet with cooking spray. Add breasts and brown on both sides until almost cooked through. Remove from skillet, and cover.

    Give another spray to the skillet. Add shallot and sauté for a minute.

    Add mushrooms, white wine, mustard, and thyme. Let simmer for 5 minutes.

    To serve, spoon the sauce over the breasts, and sprinkle with parsley.
