chicken breasts with mushroom wine sauce
I'm always looking for different ways to cook chicken. Mushrooms and wine up the fancy factor for this easy way to prepare chicken breasts! Serve over brown rice with some steamed veggies. About 2 WW points.

Ingredients
- 2 chicken breasts, boneless, skinless (about 4 oz each)
- 1/4 teaspoon salt or to taste
- 1/4 teaspoon black pepper or to taste
- 1 small shallot, minced
- 1 cup sliced baby bella or other mushrooms
- 1/2 cup white wine
- 1 teaspoon Dijon mustard
- 1/4 teaspoon thyme
- minced parsley, for serving
How To Make chicken breasts with mushroom wine sauce

Step 1Either pound each breast until about 1/2 inch thick or (and this is my preferred method) carefully slice one large breast in half so there are 2 thin breast pieces.

Step 2Season with salt and pepper.

Step 3Spray a skillet with cooking spray. Add breasts and brown on both sides until almost cooked through. Remove from skillet, and cover.

Step 4Give another spray to the skillet. Add shallot and sauté for a minute.

Step 5Add mushrooms, white wine, mustard, and thyme. Let simmer for 5 minutes.

Step 6To serve, spoon the sauce over the breasts, and sprinkle with parsley.
