I'm always looking for different ways to cook chicken. Mushrooms and wine up the fancy factor for this easy way to prepare chicken breasts! Serve over brown rice with some steamed veggies. About 2 WW points.

Ingredients For chicken breasts with mushroom wine sauce

2chicken breasts, boneless, skinless (about 4 oz each)

1/4 tspsalt or to taste

1/4 tspblack pepper or to taste

1 smshallot, minced

1 csliced baby bella or other mushrooms

1/2 cwhite wine

1 tspDijon mustard
-
1/4 tspthyme
-
minced parsley, for serving
How To Make chicken breasts with mushroom wine sauce

1Either pound each breast until about 1/2 inch thick or (and this is my preferred method) carefully slice one large breast in half so there are 2 thin breast pieces.

2Season with salt and pepper.

3Spray a skillet with cooking spray. Add breasts and brown on both sides until almost cooked through. Remove from skillet, and cover.

4Give another spray to the skillet. Add shallot and sauté for a minute.

5Add mushrooms, white wine, mustard, and thyme. Let simmer for 5 minutes.

6To serve, spoon the sauce over the breasts, and sprinkle with parsley.
