chicken breasts stuffed with mozzarella
This recipe has a bit of prep, but it is easy. I think the hardest part is flattening the chicken, so I usually ask the butcher at the store to do that for me! My kids really enjoyed this because of the cheese.

Ingredients
- 3 chicken breast halves, skinned and boned
- 2 tablespoons butter, softened
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 3 slices mozzarella cheese (1 ounce each)
- 2 tablespoons all-purpose flour
- 1 large egg, beaten
- 1 cup soft breadcrumbs
- 2 tablespoons butter, melted
- 1 tablespoon fresh parsley, chopped
- 1/8 teaspoon dried sage
- 1/8 teaspoon dried rosemary
- 1/8 teaspoon dried thyme
- 1/4 cup chablis or other dry white wine
How To Make chicken breasts stuffed with mozzarella

Step 1Place the chicken breasts between 2 sheets of wax paper. Flatten to 1/4-inch thickness using a meat mallet or rolling pin.

Step 2Spread 2 tablespoons softened butter evenly over one side of the chicken breast halves. Sprinkle with salt and pepper. Top each with a slice of cheese. Roll up, starting with the long side; secure with wooden picks.

Step 3Dredge the chicken in flour; dip in egg, and roll in breadcrumbs. Place in an ungreased 8 x 8 inch baking dish.

Step 4Combine 2 tablespoons butter and the next 4 ingredients; brush over the chicken. Bake, uncovered at 350° for 20 minutes.

Step 5Pour the wine over the chicken. Bake an additional 10 minutes or until done.
