Ingredients

  • 2 1/4 pounds breast boneless skinless ckicken
  • taste ounce salt & pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 6 tablespoons shallots chopped
  • 4 teaspoons garlic
  • 4 teaspoons tarragon
  • 28 ounces plum tomatoes chopped
  • 1/4 cup red wine vinegar
  • 1 cup dry white wine
  • 1/4 cup capers drained
  • 2 tablespoons tomato paste
  • 1/4 cup fresh parsley

How To Make chicken breast w tomatoes and capers

  • Step 1
    sprinkle chicken with salt & pepper
  • Step 2
    heat oil & butter and brown breast
  • Step 3
    add shallots & garlic - saute then add tarragon, tomatoes, vinegar,capers wine and paste. dissolve bottom gradueaux
  • Step 4
    blend, bring to boil, cover and simmer for 9 minutes sprinkle with parsley serve
