chicken and rice casserole

My husband loves chicken and rice and this is one of his favorites. I have also made this with chicken flavor Rice-a-Roni, it usually takes two to three boxes, depending on how much you need. You can also sautee a package of mushrooms and add them when you add the other veggies, if you'd like. Either way, this chicken and rice is scrumptious!

Ingredients

  • 1 to 11/2 pounds boneless, skinless chicken breasts cooked and cut up into bite-sized pieces
  • 1 cup uncooked rice
  • 4 cups chicken broth
  • 1 teaspoon salt
  • 2 tablespoons butter, room temperature
  • 10 ounces box brocolli flowerets
  • 1 small onion chopped fine
  • 8 ounces can water chestnuts, drained
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 cup mayonnaise
  • 2 to 3 cups grated cheddar cheese (mild or sharp, your preference)
  • SPECIAL NOTE: IF YOU'RE USING CHICKEN FLAVORED RICE-A-RONI, OMIT THE UNCOOKED RICE, CHICKEN BROTH AND SALT. COOK ACCORDING TO PACKAGE DIRECTIONS AND SET ASIDE. IT USUALLY TAKES TWO TO THREE BOXES.

How To Make chicken and rice casserole

  • Step 1
    Cook chicken and cut up into bite-sized pieces, set aside. Boil broccoli and onion together until very tender, drain well and set aside.
  • Step 2
    Combine uncooked rice with chicken broth and salt. Cook until rice is tender and liquid is absorbed. I used a Pampered Chef rice cooker for 35 minutes in the microwave and the rice came out perfectly. Add butter and fluff with fork.
  • Step 3
    In a large bowl, combine chicken, rice, broccoli and onions, and water chestnuts. In another bowl, combine soups and mayonnaise. Mix well and pour over chicken mixture and combine.
  • Step 4
    Preheat oven to 350 degrees and spray a 9 X 13 casserole dish with cooking spray. Pour in chicken mixture and smooth out. Sprinkle cheese evenly on top and cover with foil.
  • Step 5
    Bake covered for 30 minutes. Remove foil and bake for another 10 minutes or until cheese is lightly browned. Remove from oven and let stand for a few minutes and serve.
