chicken and mushroom saute

This was just a little something I created when I was looking for a use for my fresh herbs. I like to serve it with long grain and wild rice and broccoli.

Ingredients
- 2 - boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 6 cloves minced garlic
- 1/4 cup minced onion
- 1 teaspoon curry powder
- 2 teaspoons chopped fresh dill weed
- 2 teaspoons chopped fresh rosemary
- 1 1/8 teaspoons coarse ground black pepper
- 1 cup fresh sliced mushrooms
- 2 tablespoons butter
- 1/2 cup chicken stock
How To Make chicken and mushroom saute

Step 1Heat oil in skillet. Add chicken breasts, garlic, onion, curry, dill, rosemary and 1/8 tsp of coarse ground pepper. Cook until chicken is done through.

Step 2Remove chicken and keep warm.

Step 3Add mushrooms, butter and 1 tsp coarse ground pepper to skillet. Saute until mushrooms are tender.

Step 4Add chicken stock and chicken breasts to skillet. Simmer 10 minutes.
