This was just a little something I created when I was looking for a use for my fresh herbs. I like to serve it with long grain and wild rice and broccoli.

Ingredients

  • 2
    boneless, skinless chicken breasts
  • 2 Tbsp
    olive oil
  • 6 clove
    minced garlic
  • 1/4 c
    minced onion
  • 1 tsp
    curry powder
  • 2 tsp
    chopped fresh dill weed
  • 2 tsp
    chopped fresh rosemary
  • 1 1/8 tsp
    coarse ground black pepper
  • 1 c
    fresh sliced mushrooms
  • 2 Tbsp
    butter
  • 1/2 c
    chicken stock

How to Make Chicken and Mushroom Saute

Step-by-Step

  1. Heat oil in skillet. Add chicken breasts, garlic, onion, curry, dill, rosemary and 1/8 tsp of coarse ground pepper. Cook until chicken is done through.
  2. Remove chicken and keep warm.
  3. Add mushrooms, butter and 1 tsp coarse ground pepper to skillet. Saute until mushrooms are tender.
  4. Add chicken stock and chicken breasts to skillet. Simmer 10 minutes.
