chicken and mushroom saute

This was just a little something I created when I was looking for a use for my fresh herbs. I like to serve it with long grain and wild rice and broccoli.

Ingredients

  • 2 - boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 6 cloves minced garlic
  • 1/4 cup minced onion
  • 1 teaspoon curry powder
  • 2 teaspoons chopped fresh dill weed
  • 2 teaspoons chopped fresh rosemary
  • 1 1/8 teaspoons coarse ground black pepper
  • 1 cup fresh sliced mushrooms
  • 2 tablespoons butter
  • 1/2 cup chicken stock

How To Make chicken and mushroom saute

  • Step 1
    Heat oil in skillet. Add chicken breasts, garlic, onion, curry, dill, rosemary and 1/8 tsp of coarse ground pepper. Cook until chicken is done through.
  • Step 2
    Remove chicken and keep warm.
  • Step 3
    Add mushrooms, butter and 1 tsp coarse ground pepper to skillet. Saute until mushrooms are tender.
  • Step 4
    Add chicken stock and chicken breasts to skillet. Simmer 10 minutes.
