Cut chicken up for stewing with whole onion and pepper. Over with water and cook until tender about 3 hours. Remove chicken and onion from stock and remove bones. Cut up chicken. Make sure all the bones are out of stock. Put flour into a mixing bowl. Cut in 3 heaping tbsp of shortening till it looks like corn meal. Add salt, buttermilk and egg mix you my need to had more butter milk. Work flour into dough till you can roll it out. Put a lot of flour on what your rolling it on. Roll out very thin and cut into about 2/3 inch strips. Put chicken back in pot. Drop dumplings into boiling broth one at a time. Don't stir. You can press down with a big spoon a little to get the dumplings in. When all dumplings are added lower heat and simmer about 12 to 15 min. You can put a little butter in too .
