chicken and bean stew

A great crock pot recipe that you can make in a regular stock pot too! I just threw this together because my husband and kids love Chili and also loves.

Ingredients

  • 2 cans white kidney beans
  • 2 cans red kidney beans
  • 2 - white onion chopped
  • 2 - green peppers chopped
  • 2 - green zuchini chopped
  • 2 cans diced tomatoes
  • 1 1/2 teaspoons sea salt
  • 1/2 cup finely chopped sage leaves
  • 3 pounds or family sized package of boneless skinless chicken breast
  • 1 package family sized frozen mixed veggies
  • 2 tablespoons garlic powder
  • 2 quarts low sodium low fat chicken broth
  • 1 1/2 quarts water

How To Make chicken and bean stew

  • Step 1
    Boil Chicken until done, then drain water(so u can get the water from the chicken with out the fat)use that water which should be 1 and 1/2 qts and add in the crock pot,cool chicken enough to dice it then add it to crock pot too.
  • Step 2
    Chop up all the fresh veggies,and sage then add it to crock pot.
  • Step 3
    Open up the chicken broth, pour in diced tomatoes (no need to drain tomatoes or beans), beans and frozen veggies, add it to the crock pot.
  • Step 4
    Add in salt and garlic powder( used mainly for taste,really). Stir mixture together and let cook for 5 hrs on high setting(at least).
  • Step 5
    If making this recipe in a stock pot, do the same steps but cook on low heat and stir often so it doesn't stick to bottom.
  • Step 6
    Serve with crescent rolls when done.... or even corn bread if you want, too.
