    broiler-fryer chicken, cut up
  • 2 Tbsp
    butter, melted
  • 1 tsp
  • 1/8 tsp
    ground ginger
  • 1/8 tsp
  • 3 large
    carrots, scraped and cut into julienne strips
  • 1 small
    onion, thinly sliced and separated into rings
  • 2/3 c
    orange juice
  • 1 Tbsp
  • 1/3 c
    orange marmalade
  • 3 Tbsp
    brown sugar
  • 1 Tbsp
    lemon juice

How to Make Chicken a l'Orange


  1. Brown the chicken pieces in melted butter in a large skillet over medium heat.
  2. Combine the salt, ginger, and pepper in a small bowl; stir well, and sprinkle over the chicken. Add the carrot strips and onion rings to the chicken.
  3. Combine the orange juice and cornstarch in a medium bowl, stirring well. Add the orange marmalade, brown sugar, and lemon juice to the orange juice mixture; stir well.
  4. Pour the orange juice mixture over chicken and vegetables. Bring to a boil; cover, reduce heat, and simmer for 45 to 50 minutes or until the chicken is done.
