Ingredients

  • 1 - broiler-fryer chicken, cut up
  • 2 tablespoons butter, melted
  • 1 teaspoon salt
  • 1/8 teaspoon ground ginger
  • 1/8 teaspoon pepper
  • 3 large carrots, scraped and cut into julienne strips
  • 1 small onion, thinly sliced and separated into rings
  • 2/3 cup orange juice
  • 1 tablespoon cornstarch
  • 1/3 cup orange marmalade
  • 3 tablespoons brown sugar
  • 1 tablespoon lemon juice

How To Make chicken a l'orange

  • Step 1
    Brown the chicken pieces in melted butter in a large skillet over medium heat.
  • Step 2
    Combine the salt, ginger, and pepper in a small bowl; stir well, and sprinkle over the chicken. Add the carrot strips and onion rings to the chicken.
  • Step 3
    Combine the orange juice and cornstarch in a medium bowl, stirring well. Add the orange marmalade, brown sugar, and lemon juice to the orange juice mixture; stir well.
  • Step 4
    Pour the orange juice mixture over chicken and vegetables. Bring to a boil; cover, reduce heat, and simmer for 45 to 50 minutes or until the chicken is done.
