This is a recipe from my husband's aunt, who got it from my husband's grandma. It is a family favorite when we get together at the family cottage. It is easy to make and will feed a crowd. It is warmth and comfort, even on a hot summer day at the beach!

Ingredients For cheesy chicken casserole

  • 8 c
    egg noodles, cooked
  • 2 can
    cream of chicken or mushroom soup
  • 1 1/2 c
    milk
  • 8 oz
    american cheese
  • 4 c
    chicken, cooked
  • potato chips, crushed

How To Make cheesy chicken casserole

    You can cook the chicken either by boiling it in salted water or in broth and then chopping it up into small chunks. As an alternative, or you could chop up te chicken and saute it until it is cooked through. Once the chicken is cooked, set aside.

    Boil noodles in salted water until cooked. Drain & set aside.

    Mix milk and soup together in a large pot on medium heat.

    Add cheese and stir until melted, making sure not to burn it to the bottom of the pan.

    When cheese mixture is fully melted, add the chicken and noodles and combine well.

    Pour into a casserole dish and top with crunched potato chips.

    Cook at 325 for 30-45 minutes.

    *TIP - you can use pre-cooked or canned chicken if you don't want to take the time to cook the chicken. Also, it doesn't matter if you use dark or white meat. I have to use chicken breast because my husband will not eat any other part of the chicken, except the egg.
